My Favorite Bean Pie

Introduction

I recently discovered the Muslim Bean Pie through friends and I have been hooked ever since. I am not always able to get out and buy a pie when I have a craving but with this recipe, I can have one every week. I love sweets and this hits the spot every time! I am not always able to get out and buy a pie when I have a craving but with this recipe, I can have one every week. I love sweets and this hits the spot every time!
Number of Servings: 24

Ingredients

    2 cups navy beans cooked
    4 eggs
    1/2 can 14oz evaporated milk
    1 stick of butter
    2 tbsp vanilla extract
    2 tbsp flour
    1 tsp nutmeg
    1 tsp cinnamon
    2 cups sugar

Directions

Cook beans until soft. Preheat oven to 350 degrees.
In an electric blender, mix all of the ingredients on medium speed for 2 minutes or until mixed well. Pour mix into pie shells and bake for about one hour until golden brown. Makes 2 or 3 pies.

NOTE: After pies have cooled for 5 minutes, cover with plastic wrap and continue to cool.

Tip: Sometimes I bake this in small pie shells to make it last longer and also so I don't feel like I need to eat the whole pie.
