Pork Roast with Bendy Apples

Great recipe! Made it one evening for my brother and his family and his then 7 year old son was very concerned because he couldn't understand why the apples were so "bendy". Ingredients

    1 tsp salt
    1 1/4 teaspoon ground ginger
    3/4 ground nutmeg
    3/4 ground ground cinnamon
    1/8 teaspoon pepper
    1 (4-5 lb) center pork loin roast
    1/4 cup honey
    1/2 cup water
    1 tablespoon lemon juice
    2 medium-size cooking apples, peeled, cored, and sliced

Directions

Combine salt, 1 tsp ginger, 1/2 tsp. nutmeg, 1/2 tsp cinnamon, pepper. Rub on Roast.Place roast, fat side up, on a rack in a roasting pan. Insert meat thermometer into thickest part of roast, making sure it does not touch fat or bone. Bake at 325 degrees F for 30 minutes or until thermometer registers 170 degrees.

Combine honey, lemon juice, 1/4 tsp ginger, 1/4 tsp nutmeg abd 1/4 tsp cinnamon in a saucepan; stir well. Bring to a boil. Add apple; cover and simmer 8 minutes or until tender, stirring occasionally. Transfer roast to a platter; spoon apple mixture over roast.
