Farro "Mac" and Cheese

Introduction

Great if you're trying to increase your whole grains and decrease your processed foods. Great if you're trying to increase your whole grains and decrease your processed foods.
Number of Servings: 4

Ingredients

    1 Cup Dry Farro
    3 Cups Water
    1 Medium Corn on the Cob, Kernels Removed
    12 Grape Tomatoes, Halved
    1 Tbsp Butter, salted
    1 Tbsp White Flour
    1.25 Cups 2% Milk
    1.5 Cups Shredded Swiss Cheese

Directions

Boil the water and add the farro. Cook covered for 30 minutes and drain the extra water. Stir in the corn and tomatoes. In a small sauce pan, melt the butter and stir in the flour. When the flour starts to cook, slowly add in the milk. Once the milk is hot, add in the cheese and stir until smooth. Stir the cheese sauce in with the farro and vegetables. Bake in a 9X9 baking dish for 30 minutes at 350.
