Stuffed Mushrooms

Introduction

Ingredients

    6 white, button mushrooms
    3 TB finely chopped onion
    1 tsp garlic, minced
    1/2 plum tomato, finely chopped
    4 oz. Jimmy Dean Reduced Fat Pork Sausage
    1/2 cup shredded cheddar cheese
    pepper to taste
    Greek seasoning
    dash of basil

Directions

Clean mushrooms. Remove stems, and clean out inside, being careful not to damage the shell.

Crumble the sausage and cook in skillet til brown, with no pink remaining.

Dice the onion, garlic and tomato while meat is cooking. Add the onion and garlic to skillet after meat is brown. Cook 3-4 minutes. Add tomato. Cook another 2 minutes. Add seasonings to meat mixture. I just throw in what sounds good at the time. Either a little pepper and basil, or pepper and greek or creole seasoning. Then mix in cheese with the meat.

Take the meat mixture and stuff into the mushroom bases. Cook in 325* oven for 15 minutes.

(My huband loves black olives, so sometimes I'll chop these up and add it to the stuffing mixture. )
