Chard and leek soup with mushroomsSubmitted by: MEGABOMB
2 TB. unsalted butter
2 leeks, white and light green parts, cut into ï¿½" slices
2 cups mushrooms, sliced
5 cups Swiss chard, cut into 1" pieces
6 cups veggie stock
1 cup canned, rinsed green or brown lentils
1/2 cup basmati rice
Salt and pepper
1/4 cup grated Parmesan cheese
Add the Swiss chard, lentils and stock and bring to a simmer.
Cook until the chard wilts, about 5 minutes.
Add the rice, salt, and pepper.
Cover and cook over low heat about 20 minutes until the rice is cooked.
Stir in cheese and serve.
