Slow cooker Chicken Chow Mein

Introduction

No need for take-out. Family favorite chow mein cooks while your away! No need for take-out. Family favorite chow mein cooks while your away!
Number of Servings: 6

Ingredients

    1 1/2 pounds chicken breasts, cut into chunks
    1 T. corn oil
    1 cup carrots, sliced diagonally
    1 cup celery, coarsely chopped
    1 medium onion, chopped
    2 tsp. minced garlic
    1 cup chicken broth
    2 T. soy sauce
    1/2 tsp. ginger
    2 T. cornstarch
    3 T. cold water
    1 cup fresh broccoli florets
    1 cup fresh snow pea pods
    6 cups chow mein noodles

Directions

1. Cut chicken into 1" pieces. Place in slow-cooker. Or you may cook in a frying pan before adding to the slow cooker, cook in oil til brown
2. In slow cooker, place carrots, celery, onion and garlic. Add chicken. Mix broth, soy sauce and ginger; pour over chicken.
3. Cover; cook on Low heat setting 6 to 8 hours.
4. in small bowl, mix cornstarch and water until smooth; stir into chicken mixture. Stir in broccoli and pea pods. Increase heat setting to High; cover and cook 15 minutes. Serve over chow mein noodles.
Makes approximately 6 servings.

    Delish! Super easy, made my apartment smell great. The chicken becomes so tender and flavorful! I subbed in some mixed stir-fry veggies and served over chow mein rice noodles. Will definitely make this again. - 4/2/09

  • I liked this recipe. I tried it with leftover pre-cooked chicken. Next time I will use fresh uncooked chicken. I also like a little more sauce, so I increased the broth amount (I used a full 14.5 oz can of fat-free broth). - 1/4/13
