Green Bean Casserole with Sour Cream

Introduction

This isn't your traditional Green Bean Casserole! No Cream of Mushroom here! This side dish goes with almost anything, even Italian, any time of the year. It's a light and refreshing change from the traditional dish. This has become my signature dish, the one everyone asks for. This isn't your traditional Green Bean Casserole! Number of Servings: 8

Ingredients

    2 medium Onions, Sliced
    1 tbsp minced Parsley
    1/4 cup Fat Free Margarine
    2 tbsp. flour
    1/2 tsp. Black Pepper
    1 tbsp. grated Lemon Peel
    1 cup Fat Free Sour Cream
    2 pounds French Cut Green Beans, frozen, cooked and drained
    4 oz fresh sliced Mushrooms
    1/2 cup Low Fat Shreaded Cheese, Cheddar or Colby
    1/2 cup Seasoned Bread Crumbs
    2 tbsp. Melted Fat Free Margarine for topping

Directions

1. Cook Green Beans according to package, drain and set aside.
2. Saute onions and parsley in Fat Free Margarine until tender, not brown.
3. Add Flour, pepper, and Lemon Peel.
4. Add Fat Free Sour Cream and mix well.
5. Stir in Green Beans and mushrooms.
6. Place in a 7x11 inch casserole dish.
7. Top with Low Fat Shreaded Cheese.
8. Combine Seasoned Bread Crumbs with Melted Fat Free Margarine and sprinkle over the top of the Low Fat Shreaded Cheese.
9. Bake at 350 degrees for 30 minutes.

Serves: 8

Substitutions: Canned Green Beans and Mushrooms may be used instead of fresh but they may raise calorie intake. Drain both items if you chose to use canned goods.
