1/4 cup cooked Brown Rice 1 cup Water 1 med Chicken Breast, no skin or bones 1/2 cup cooked spinach 1 cup cooked Broccoli 3 Tbls. Fat free Italian dressing
Combine Rice, Water, Spinach, & Broccoli in a small sauce pan. Bring to a boil, then reduce heat to a simmer and cook till rice is done and has absorbed the water. While cooking the Rice broil chicken breast till cooked thru and browned. When done cut up chicken into small bite size pieces. Combine Rice mix and chicken with Italian dressing. Serves 2. Can be made with your choice of vegtables or dressing. Check Nutrition info when substituting.
