Introduction

I love chicken marsala and will often order it whenever we go out for Italian. I've made a few versions and this one is by far my favorite. The almond meal gives the chicken another twist of flavor that goes very well with the sweet marsala wine. Ingredients

    • 2 boneless, skinless chicken breasts, halved
    • ¼ cup almond meal/flour
    • 1/8 tsp black pepper
    • 1/8 tsp salt
    • ½ tsp dried oregano
    • 2 Tb extra virgin olive oil
    • 2 Tb I Can't Believe It's Not Butter
    • 3 cloves garlic, minced
    • ½ cup chopped shallots
    • 8 oz sliced fresh mushrooms
    • 1 cup Marsala wine
    • ½ cup low sodium chicken broth

Directions

I use very large breasts for this recipe so each half-breast equals one serving
