Loaded Potato Salad

Ingredients

1 1/2 pounds redskin potatos, cubed
3/4 cup fat free sour cream
4 slices turkey bacon, cooked crisp and crumbled
3/4 cup 2% Shredded Cheddar Cheese
4-6 green onions, chopped
salt & pepper
cayanne pepper (optional)
Directions
Cover the cubed potatos in about an inch of cold water and bring to a boil. Cook for 12-15 minutes or until fork tender. Drain well and put into large mixing bowl.
Add sour cream, bacon, cheese and green onion, stirring to combine. Season with salt & pepper to taste. Add a dash of cayanne for some extra kick!
