Pumpkin Muffins

Ingredients

    1/4 cup margarine
    1 cup brown sugar
    1/2 cup applesauce
    2 cups canned pumpkin w/o spices
    1 tsp. cinnamon
    1 tsp. nutmeg
    2 1/2 cups whole wheat flour
    2 tsp. baking soda

Directions

Preheat oven to 350 degrees and line muffin tin with paper cupcake liners. Cream together margarine and sugar, add applesauce, pumpkin, cinnamon and nutmeg. Mix well and add flour and baking soda. Fill muffin tins and bake for about 20-25 minutes. The muffins don't rise much, so don't be shy about piling the batter on. Refrigerate or freeze after baking.

  • This looks like an excellent recipe, especially since it uses alot of the whole, natural foods! Hope to try it some day...altho it'll be a bit more work for me since we can't get canned pumpkin or applesauce here in Brazil. It'll just increase the prep time a bit, but worth it, I'm sure! - 4/12/08
