Either 4 chicken breasts or a package of skinless chicken tenders
1 can Artichoke Hearts, chopped large
2 T Lemon juice
1 can Chicken broth
1 T Capers, chopped
1 C flour (to dredge chicken in)
2 T Olive oil
1 T Paprika
1 T Garlic powder
salt and pepper to taste
Mix flour and spices on plate, dredge chicken in flour
Heat oil in non-stick pan
Place chicken in pan and brown, remove chicken and add artichoke hearts, capers, lemon juice and chicken broth- stir. Simmer until thickened, add cooked chicken and warm through. Serve.
