8 potatoes peeled and cut in fourths.
1/2 C olive oil
Coat the bottom of a 9 by 13 pan with half the olive oil.
Pour the rest of the olive oil on the top of the potatoes and brush until covered.
Cook at 350 for 45 minutes or until crispy and brown, turning once.
