Potato & Cauliflower Salad

Introduction

A veganized version of an American summer staple, with a little extra fiber provided by the additional veggies ;-) A veganized version of an American summer staple, with a little extra fiber provided by the additional veggies ;-)
Number of Servings: 12

Ingredients

    2 lbs red potatoes, washed and cubed
    1 head cauliflower, cut into bite sized cubes
    1 cup chopped red onion
    2 scallion stalks, chopped
    1 cucumber, peeled and chopped
    1 cup chopped celery, with leaves
    1 cup Nayonaise
    1/4 cup brown mustard
    celery salt to taste
    pepper to taste
    garlic powder to taste

Directions

Boil potatoes and cauliflower until tender but not mushy. Chill (probably an hour).

Mix with the remaining ingredients until everything is moistened and seasoned. Chill another hour or two.

Makes at least 12 one-cup servings.
