Introduction

Let's face it, most desserts are LOADED with calories, and most aren't of the healthy variety... Try this recipe for a nice change of pace. With only 166 calories it is on the "low" end of the dessert scale, not to mention fairly nutritious. Let's face it, most desserts are LOADED with calories, and most aren't of the healthy variety... Ingredients

    TOPPING:
    3/8 Cup Granola
    3/8 Cup Oatmeal
    1/2 Cup Splenda Brown Sugar Blend
    1/2 tsp Ground Cinnamon


    FILLING:
    5 Cups Mulberries (Mulberries are very juicy and reduce alot when cooked)
    1/4 Cup Oat Flour (this can be made at home, just place 1 1/4 cups quick oats or old fashioned uncooked in blender or food processor. Blend about 1 minute, stopping blender to stir occasionally. Makes 1 cup)

Directions

Preheat oven to 375 deg F.
In a medium bowl, combine Granola, Oatmeal, Brown Sugar Blend, and Cinnamon. Make a well in the center of the dry ingredients and blend in egg, mixing until the topping is crumbly. Set aside.
To prepare the filling, place mulberries in a large bowl and sprinkle with the oat flour. Toss gently to evenly coat the mulberries. Transfer berry mixture to a baking dish (9 x 9 usually works well) that has been sprayed with cooking spray. Sprinkle crumbly topping over berry mix.
Bake until top is "bubbling" and looks crisp brown or for approximately 40-45 min
