Stuffed Poblanos

Ingredients

    Poblano Peppers stuffed with mixture of ground beef, long grain brown rice, spinach, portobello mushrooms, garlic, shallots or onions,fire roasted tomatoes (drained), cilantro, salt, pepper and whatever other spices you want to add!

Directions

Serving size: 1 stuffed pepper

Cook 1 cup rice according to package directions. Remove skins from peppers by placing them over the open flame of the stove or on the grill. Place in a brown paper bag to loosen. Set skinned peppers aside.

Brown ground beef and drain. Set aside. Sweat garlic and onion/shallots in olive oil. Add chopped/diced portobello mushrooms ( I buy them already cut up) and saute. Add spinach and wilt.

When done, add cooked rice, browned ground beef and fire roasted tomatoes, also add some of the cheese. Cook until cheese is melted and all ingredients are incorporated. Stuff peppers and lay in a roasting dish. Cover with pasta sauce and cheese. Bake in a 325 degree for 30 minutes until cheese is melted.
