Number of Servings: 4

Ingredients

    Summer Squash sliced 1 cup
    Frozen mixed vegetables 1/2 cup, defrosted.
    Cabbage, fresh, 1cup choped
    Onion 1 small
    Zucchini, 1 cup, sliced
    Olive Oil, 3 tbsp
    Black Pepper, 1 tbsp
    Garlic, 2 cloves, chopped

Directions

Combine all vegetable ingredients together in a casserole dish. Drizzle olive oil over vegetables, mix vegetables until coated with olive oil. Add black pepper and garlic.

Bake on 350 for 30 mins or until vegetables are tender. Stir twice in between cooking times.
