IntroductionI love a meal where the basics are all in one dish! This is SO much better than the creamy tuna noodle casseroles my mother made. I love a meal where the basics are all in one dish! This is SO much better than the creamy tuna noodle casseroles my mother made.
2 oz or so pasta - I used farfalle (one cup)
1 can white albacore in water, drained
6 cherry tomatoes, quartered
1 cup or so fresh arugula
Boil pasta to al dente. Mix the tuna, tomatoes, arugula in a bowl. Drain pasta. Add to everything else. Mix. Eat. YUM!
NOTE: You can add a drizzle of olive oil if this is too dry for you, or add a bit of shredded Parmesan. You could also substitute radicchio for the arugula, though I love arugula's unique taste. Basil, oregano, other herbs would be great. As would chopped red pepper. This is just the basic, so feel free to adjust the recipe to your taste. Just remember to add in the calories.
NOTE: This has a lot of tuna - but it was great for lunch for 1!
