6 servings Crockpot Mexican Chicken (see recipe) 6 (6 inch) corn tortillas 1 cup Mexican cheese 1 cup cottage cheese
Preheat oven to 350. Spread 1 cup of crockpot Mexican chicken in the bottom of a 13X9 pan. Cover with 3 corn tortillas (cut one in half). Spread tortillas with cottage cheese. Sprinkle with 1/3 cup Mexican cheese and layer more Mexican chicken. Cover with 3 more corn tortillas, then the rest of the Mexcian chicken. Sprinkle with the remaining cheese. Cover and bake 20 minutes. Uncover and back 10 more minutes or until cheese is browned.
