Meatloaf muffins

Number of Servings: 6

Ingredients

    Basic mix:

    Ground beef, lean, 16 oz
    Egg, fresh, 2 large
    Bread crumbs, dry, grated, plain, .5 cup

    Seasonings:

    Mozzarella Cheese, part skim milk, 2 oz
    Garlic, 3 tsp
    Basil, 10 leaves
    Red pepper flakes, pinch
    Salt, to taste
    Pepper, to taste

Directions

Preheat oven to 375.

Mix all ingredients together.

Separate into 6 individual muffin tins (or simply put the whole thing into a loaf pan.)

Bake at 375 for approximately 35 minutes.

Makes 6 individual meatloaf "muffins."

You can vary the seasonings in this very easily for different flavors.
