Potato Nachos

Introduction

A very filling satisfying meal for one person to satisfy your mexican cravings. A very filling satisfying meal for one person to satisfy your mexican cravings.
Number of Servings: 1

Ingredients

    1 Medium Potato, sliced into 3/8" slices
    1/4 c. Black Beans
    1/2 c. Salsa
    1/2 c Fat Free Sour Cream
    1 c. 2% Colby Jack Cheese (you can use fat free, but I found that this melts better)
    Cumin (powdered)
    Salt


Directions

Arrange potato slices on a microwavable plate. Sprinkle with Cumin and Salt, cover with plastic wrap, and poke holes to vent. Microwave 6-10 minutes (depending on your microwave power) The center of each potato slice should be soft, not crunchy when done.
Top each slice with some of the salsa, then some of the black beans, then the cheese. Microwave, uncovered, for an additional 2 minutes.
Top each slice with a dollup of sour cream.
Enjoy!
