Simple Carrot Cake




Number of Servings: 16

Ingredients

    1 yellow cake mix
    1 c lt. mayo
    3 eggs
    1/4c. unsweetened applesauce
    1/4c. water
    2t. cinnamon
    2c. finely shredded carrots
    1/2c chopped pecans
    4T powdered sugar

Directions

Combine all ingredients except carrots, pecans and powdered sugar, mixing atmedium speed with an electric mixeruntil well blended. Stir in carrots and pecans. Pour into 9x13 inch baking pan sprayed with cooking spray. Bake in 350 degree oven for 35 minutes or until wooden toothpickinserted in center comes out clean. Cool completely and Sift powdered sugar over top of cake.

  • I typically change the oil for applesauce, so changing the mayo for more applesauce should work. The cake dries up quicker, but if making it to share it should be OK. I also agree that a recipe with wheat flour would be better - healthwise -. - 5/11/08

  • Don't knock the mayo in cake - I too make the best chocolate cake- from scratch - don't like boxes. With mayo you use no oil and you can use the light mayo - but about the carrot cake, I'd like to see a scratch recipe maybe using whole wheat flour.Some of the recipes here don't seem too healthy. - 5/11/08

  • sounds yummy. will make it ... maybe yogurt and eggbeaters instead of mayo and whole eggs... but that's cuz half of my daughters are SParklers too... and we're ALL looking for something lowfat and easier for special occasions! - 5/11/08

  • I see a lot of people "booing" the idea of mayo. I agree that there may be better options in terms of calories, but mayo does seem to have the ability to create very moist baked goods. Light Sour cream and yogurt would work as well, and you could always use egg whites instead of whole eggs :) - 5/11/08

  • This might be a good recipe, but as a former wedding cake baker & decorater, I found it better with any carrot cake to let it stand for a couple of days before serving to let the flavors blend and the cake get even moister. - 5/11/08

  • You could also add about a quarter cup ground flax to increase the fiber content. Looks yummy. Will try it soon. - 5/11/08

  • Sounds good. I wonder how it would be if I substituted plain yogurt for the light mayo. It would probably cut the calories a little too. I think I may try this. - 5/11/08
