lentils - 1 pound bag
onions - 2 large (white, spanish, or vidalia)
garlic - 6-8 cloves
olive oil - 6 tbsp
tomato sauce - 2 8oz cans
2 basil leaves
In large pot, bring lentils and 10 cups of water to a boil.
Boil 30 minutes over medium heat.
Chop onions and garlic.
Add onions, garlic, basil leaves, tomato sauce and olive oil to pot.
Simmer 30 minutes.
Salt and pepper to taste.
Cover and vent.
Simmer 30 more minutes.
(Carrots and/or celery can also be added with the onions)
Makes about 12 servings
