Introduction

Yummy Chicken Soft Taco Thingies Yummy Chicken Soft Taco Thingies
Number of Servings: 12

Ingredients

    4 boneless chicken breasts (diced)
    1 tsp cumin
    3 tbsp chili powder
2 garlic cloves OR 1 tsp garlic powder
    1 medium onion (diced)
    2 medium bell peppers
    1 canned diced tomatoes (undrained)
    2 cups chicken broth
    12 - 24 flour tortillas
    Cooking Oil

Directions

After cutting up your chicken in little bits, heat some cooking oil in a frying pan and cook up your chicken. While it is cooking chop the onion, garlic and green peppers adding them as you finish. Cook all until the chicken is cooked through and the onions and green peppers are softened. Add in tomatoes, chicken broth and spices. Bring to a boil, cover and simmer over medium heat for 30 minutes. For a more intense flavor put mixture in the fridge and reheat it the next day.

When the chicken mixture is done, heat oil in a large skillet. Use roughly 2 cups of oil (enough so that the entire skillet is covered by about 1/4 inch in oil). Put some chicken mixture, about 1/4 - 1/2 cup depending on the size of your shell, on one side and then roll shell. Use a toothpick to keep shell closed. When the oil is hot enough place wrapped flautas in oil. Fry on each side until tortilla keeps it's shape without the toothpick, about 1.5 minutes on each side.

Makes about 12 large flautas. (You can make smaller ones by using less filling)
