Jambalaya with Quorn

Introduction

Uses Quorn for chicken. We are vegetarians who also eat fish/seafood, so we add the shrimp but it is good without. Uses Quorn for chicken. We are vegetarians who also eat fish/seafood, so we add the shrimp but it is good without.

Ingredients

    1 pkg Spanish rice
    1/2 package Quorn chik'n tenders
    1.5 C chopped onion
    1 can undrained diced tomatoes
    1 can dice tomatoes w/green chiles
    6 cloves garlic, minced
    1/4 t hot sauce
    8 oz precooked shrimp
    1 med green pepper, chopped

Directions

In large skillet, saute rice-vermicelli mix as package directs. Stir in 2 cups water, Quorn, onion, tomatoes, garlic, hot sauce, and contents of seasoning packet; bring to boil over high heat. Cover; reduce heat to low. Simmer 10 minutes. Stir in shrimp and green pepper. Cover; simmer 8-10 minutes or until most of liquid is absorbed and shrimp is pink.
