Chick Peas and Tuna Salad

    * *Chick Peas, 3.5 cup (remove)
    * Olive Oil, 1 tbsp (remove)
    * Peppers, sweet, red, raw, sliced, .125 cup (remove)
    * *Potato, raw, 1 medium (2-1/4" to 3-1/4" dia.) (remove)
    * Mestre Alfredo Atum, 14 oz (Tuna Fish)
    * Mixed Vegetables, frozen, 1 package (10 oz) (remove)
    * *Del Monte Cut Green Beans, .5 cup (remove)
    * *Lawry's Taco Seasoning, .25 tsp (remove)
    * Onions, raw, 8 slice, thin (remove)

    # Ken's Steak House, Lite Raspberry Walnut Vinaigrette Salad Dressing, 2 Tbsp, 1 serving (remove)


Heat oil in a large skillet over medium heat. Sauté shallot/onions until fragrant. Add remaining ingredients except tuna stir into skillet. Wait until the vegetables/potatoes cook than add tuna last. Season with Lawry's Taco Seasoning. Reduce heat, cover, and simmer for 18 to 20 minutes.
Stir and serve, over white long grain Rice.

  • This was a simple dish to make, and LOOKS better than it tastes, in my opinion. I felt like it needed some sort of sauce or broth to make it more enjoyable-- chick peas are very dry by nature. On the plus side, it's a filling dish with lots of veggies. Not sure I'll make it like this again. - 11/1/10

  • This was so easy to make and so tasty! I had to omit the frozen vegetables and only used one can of tuna. My skillet wasn't big enough. I also used Taco Bell taco seasoning, since our grocery didn't have the suggested brand. Great way to get your veggies! Will definitely make again. - 4/25/08
