Daisy's Black Beans

Introduction

Number of Servings: 9

Ingredients

    1 lb black beans, uncooked
    1 smoked ham hock
    2 bay leaves

    1/4 onion
    2 garlic cloves
    1/4 poblano pepper
    1/4 bunch of cilantro

    salt and pepper, to taste
    3 tbsp coarsely chopped olives w/ pimentos
    1 tsp capers
    1/2 tsp ground cumin


Directions

Soak beans overnight. Drain and put in lg pot with ham hock, 2 bay leaves and enough water to cover the beans by 2 inches. Boil gently for 2 hours, skimming off foam as they cook.

In food processor, place onion, garlic, poblano, and cilantro and process until almost smooth.

Stir recaito (veggie blend), salt, pepper, olives, capers, and cumin into the cooked beans. Simmer for 10 minutes.

Serve with rice.
