Preheat oven to 350 and spray an 8x5 loaf pan with cooking spray. Cook the onion in cooking spray until soft, 4-5 min.
In a medium bowl, combine the "meat," onion, bread crumbs, milk, egg white, ketchup, cheese, garlic powder, basil, thyme and pepper; blend well. Shape into loaf and transfer to pan. Bake until cooked through 45-50 minutes.
I am not a vegetarian but my 13 yr old daughter is and I am trying to be supportive. We made this together and I was very impressed at how good it turned out. We actually all really liked it. We will be making it again!!!
This is the best vegetarian meatloaf I've ever made. Those are the exact words my husband said to me. This after my eight-year-old sang its praises and my 2-year-old ate an entire serving and then tried to eat mine. I look forward to making this again!
