Chrissie's Turkey Breast

Ingredients

    1 TBSP Herb de Provence
    Salt and Pepper
    2 tbsp capers
    1/2 cup Marsala Wine
    1/2 cup Low Sodium Chicken Broth
    1/4 cup fresh lemon juice
    1 tbsp chopped basil (or 1 tsp dried basil)
    1 tbsp minced garlic (1 clove)

Directions

Makes 4 servings

1. heat a skillet over medium-high heat with cooking spray
2. sprinkle turkey breast on both sides with herb der provence seasoning and salt and pepper to taste.
3. Add turkey to hot pan and cook on both sides for 2 to 3 minutes.
4. Remove Turkey from pan and cover to keep warm.
5. Add garlic to pan and saute for a minute, then deglaze pan with marsala wine. Simmer for a minute to reduce the wine by half, then add the chicken broth and lemon juice and capers. Bring to a boil and reduce heat and simmer for two minutes.
6. Add the turkey back in the pan making sure to coat the chicken with the sauce. Cover and simmer for 3 to 4 minutes. Serve hot.

Serves well with brown rice and sauteed spinach.

  • Am i missing something here? When do you add basil &what kind/size turkey breast? I used bone in 3lb breast&tossed the basil inthe simmer, however after 4 minutes covered in pan still squishy, so i flipped it & covered& simmered 4 more minutes, it was still raw in center, flip & smr 8 min more - 9/13/08

  • This was REALLY good! I don't usually like turkey, but this was superb!!! BUT I don't think the nutrition information is correct (turkey not included?) - I re-entered it in the recipe calculator with 4 oz of turkey breast cutlets/serving (everything else was the same), it came out to 273 calories - 7/25/08
