Quinoa Salad

Introduction

quinoa, black beans, corn quinoa, black beans, corn
Number of Servings: 8

Ingredients

    .75C Quinoa
    1.5 C black beans (about 1 can)
    1 1/2 T red wine vinegar
    1C corn
    1 Red bell pepper
    4 green onions
    1 t garlic - minced
    1/4 t cayenne
    1/4 C fresh cilantro
    1/3 C lime juice
    1/2 t salt
    1 1/4 t cumin
    2T olive oil

Directions

Rinse quinoa until water runs clear, simmer with .50 - .75 Cup water, about 20 min. Fluff, cool. Mix beans with vinegar and salt. Add beans, corn, bell pepper, scallions, garlic, cayenne, and cilantro to quinoa, toss. Whisk lime juice, salt, cumin and oil, drizzle and toss with salad. Make ahead, refrigerate, but serve at room temperature.
