Introduction

A delicious dessert - fresh berries over a cheesecake-like tart filling. You can use whatever kind of berries you like! Let set overnight for a more firm filling. Number of Servings: 8

Ingredients

    1 premade graham pie crust, low-fat
    6 ounces bar cream cheese, room temperature
    1/4 cup Splenda
    1/2 teaspoon pure vanilla extract
    3/4 cup heavy cream
    2 cups blackberries (or berry of your choice)
    1 tablespoon seedless raspberry jam, optional

Directions

In a large bowl, using an electric mixer on medium speed, beat cream cheese, vanilla, and Splenda until light and fluffy. Gradually add cream, and beat until soft peaks form; spread mixture in pie shell. Scatter berries on top.


Optional: In a small saucepan, combine jam and 1 teaspoon water; heat over low until liquefied, about 2 minutes. Using a pastry brush, dab berries with glaze.


Refrigerate tart at least 60 minutes or, covered, up to 1 day.
