Ingredients

2 1/2 c. all-purpose flour
1/2 c. Splenda brown sugar blend
3 tbsp. flaxseed, ground
2 tsp. baking soda
2 tsp. ground cinnamon
1/2 tsp. salt
1 c. shredded carrot
2 small apples, shredded (skins on)
3/4 c. raisins, not packed
1/3 c. chopped pecans
1/4 c. flaked sweetened coconut
1 (8oz.) can crushed pineapple, drained
1/3 c. applesauce, unsweetened
1/3 c. apple butter
2 tsp. vanilla extract
2 large eggs
2 large egg whites

Directions
Preheat oven to 350.
Combine flour and next 5 ingredients (thru salt) in large bowl. Stir in carrot and next 5 ingredients (thru pineapple); make a well in center of mixture. Combine applesauce and next 4 ingredients (thru egg whites); stir w/ a whisk. Add wet mixture to dry mixture, stirring just until moist.
Spoon into 24 muffin cups coated w/ cooking spray. Bake at 350 for 25 mins. or until muffins spring back when touched lightly in center. Remove from pans immediately and cool on wire rack.
