1 8oz pkg herb stuffing mix
1 stick melted butter
1 1/2 - 2 lbs squash (yellow & zucchini), sliced
1 C shredded carrots
1 can sliced water chestnuts, drained
1 can cream of celery soup
1 small onion, chopped
Optional: add grated cheddar cheese on top, bake an addional 5 minutes.
Option: Substitute cream of mushroom or chicken soup.
