1 Can callaloo
4 oz cured cod fish (presoaked overnight)
1 Small onion
2 oz Butter (optional)
Bell peppers and green onions (optional)
Fried bacon (optional) but adds flavor)
One pinch black pepper
peel and diced onion and tomato and other desired vegetables
Open and drain callaloo
Put butter ( if desired) in pot over low flame and add vegetables
Wash and shread codfish over vegetables
Pour drained callaloo into pot and stir
Cover and let simmer
If desired, bacon can be crumbled on top and mixed in 2 minutes before done.
this vegetable is already cooked so long cooking is not necessary.
Can be served over rice, eaten on bread as a sandwhich, eaten with corn muffin or be enjoyed just by itself.
