Emily's Greek Chicken Surprise

Introduction

A coworker of mine made this and I thought it sounded great. I altered it slightly to make it a little more healthy, i.e. less oil and LF cheese to lower the fat. Really great flavors! Number of Servings: 4

Ingredients

    16 oz chicken
    8 oz Penne, cooked and drained
    1/2 c. Kalamata olives, chopped (about 13 large olives)
    1 tomato, chopped
    2 TB Olive oil
    3 cloves garlic, pressed
    Greek seasoning to taste
    2 oz. Low fat crumbled Feta cheese

Directions

Drizzle chicken with oil and seasoning, press garlic on top. Cook chicken 20-25 minutes. Add tomato, olives and pressed garlic. Cook for another 5-10 minutes. (At this point I would diced the chicken). Add cheese and toss with cooked pasta.

Dinner portion, can divide into 4 large servings. For lunch, maybe 6 smaller servings with a good side salad. Calculations are based on 4 servings.
