Introduction

my orginal recipe called for coconut oil - some folks love it some think it's terrible. Use whatever oil you like. I have altered the nutrition info to reflect using Land o'Lakes light butter with canola my orginal recipe called for coconut oil - some folks love it some think it's terrible. Use whatever oil you like. I have altered the nutrition info to reflect using Land o'Lakes light butter with canola
Number of Servings: 6

Ingredients

    1 1/3 C Whole Wheat flour
    1 C Water
    2 Tbsp plain yogurt (i use vanilla sometimes)
    2 eggs, separated
    4 Tbsp land o lakes light spreadable with canola oil
    2 Tbsp honey
    3/4 tsp salt (kosher or sea)
    2 tsp baking powder



Directions

combine flour, water and yogurt - let stand at least 7 hours
separate eggs, beat yolks, butter , honey and salt and add to the flour/yogurt combo
beat egg whitest until stiff peaks form and fold into batter
add baking powder quickly.

  • I just want to add a comment about Coconut Oil. I think that it would be especially good to do some further google research because saturated fat is always of animal origin. Coconut Oil is a healthy medium-chain fatty acid of 8 to 12 carbons whereas Beef fat has an 18 carbon chain, very unhealthy! - 6/16/08

  • You know, I didn't believe my dad when he said coconut oil is one of the worst ones out there... but my research said it's true. it is THE WORST saturated fat oils, even over red meat fats, I still find it hard to believe, but I'm going to make a valid effort to stay away from coconut. - 4/23/08

  • Wow! 8.2g of saturated fat per serving. I would not consider this a healthy recipe. Why would you use coconut oil in this recipe? It is so unhealthy. - 2/16/08
