Ingredients

1 1/3 C Whole Wheat flour
1 C Water
2 Tbsp plain yogurt (i use vanilla sometimes)
2 eggs, separated
4 Tbsp land o lakes light spreadable with canola oil
2 Tbsp honey
3/4 tsp salt (kosher or sea)
2 tsp baking powder
Directions
combine flour, water and yogurt - let stand at least 7 hours
separate eggs, beat yolks, butter , honey and salt and add to the flour/yogurt combo
beat egg whitest until stiff peaks form and fold into batter
add baking powder quickly.

I just want to add a comment about Coconut Oil. I think that it would be especially good to do some further google research because saturated fat is always of animal origin. Coconut Oil is a healthy medium-chain fatty acid of 8 to 12 carbons whereas Beef fat has an 18 carbon chain, very unhealthy! - 6/16/08
