Spinach Feta Bake

Number of Servings: 1

Ingredients

    1 1/2 cups cooked brown rice
    1 medium chopped onion
    1 cup chopped mushrooms - optional
    1 tsp. olive oil
    2 eggs
    3/4 cup chicken or vegetable stock
    1 Tbs. lemon juice
    1 Tbs. soy or plain flour
    1/2 cup wheat bran
    1 cup texturized vegetable protein
    1/4 cup crumbled feta cheese
    3/4 cup finely diced firm tofu
    1 pkg frozen chopped spinach - thawed
    salt
    pepper
    1/2 tsp oregano
    1/2 tsp basil
    1 Tbs parsley
    1/2 tsp grated nutmeg
    dash cayenne
    1/2 tsp crushed red pepper flakes

    Additional wheat bran
    1 Tbs parmesan cheese

Directions

Saute onion and mushrooms in olive oil and set aside to cool slightly.

Combine all ingredients and mix well.

Place in greased casserole and top with a sprinkle of wheat bran and parmesan cheese.

Bake @ 375 for 25 - 30 minutes.
Serves 6-8
