Introduction

Number of Servings: 4

Ingredients

    Mushrooms, fresh, 2 cup, pieces or slices (1st choice is fresh porchini)
    Whole Wheat Spaghetti, cooked (pasta), 4 cup
    Parsley, 1/2 cup
    White Wine, 1 cup
    Garlic, 3 cloves
    Scallions, raw, 1 large
    Butter, salted, 1 tbsp
    Parmesan Cheese, freshly grated, 4 tbsp

Directions

Begin boiling water for pasta. In skillet, saute half of the butter and scallions, adding garlic and lastly mushrooms. Once the onions are turning clear add the wine, cover and let reduce 10 minutes or so.

Cook pasta according to directions. Wile pasta is draining, add rest of butter to pasta pan and melt. Add in finely chopped parsley and cook for 1 minute. Add pasta and then the mushrooms and wine reduction from skillet. Divide into four portions, garnish with freshly grated paramasan and serve immediately.

This woodsy pasta can be served with roasted, herb covered pork tenderloin, warm wilted greens with cider vinegar and scallions and rest of the white wine. I recommend Castello Banfi's Serena Sauvignon Blanc .
