Curry Spiced Salad



Introduction

A healthy salad with curry-yogurt dressing. A healthy salad with curry-yogurt dressing.
Number of Servings: 1

Ingredients

    1.5 cups romaine (or other) lettuce
    1/8 cup cauliflower florets
    a few thin strips of carrot
    1 tbsp peas (defrosted if frozen)
    appx 10 pine nuts

    DRESSING:
    scant 1/4 cup fat-free plain yogurt
    1/2 tsp curry powder
    1/4 tsp minced garlic

Directions

Pile the salad body ingredients in a bowl.

In a small dish, mix together yogurt, garlic, and curry powder.

Pour over salad and enjoy! Yummy.

Serves 1, about 2 cups total
