Healthy Heart Mini Confetti Meatloaf

Introduction

Number of Servings: 6

Ingredients

    1 1/3 pounds 97% lean ground beef
    1 cup bread crumbs, plain
    1 tsp Italian Seasoning
    2 cups shredded zucchini
    1 large egg (or 1/4 cup egg substitute)
    pepper, to taste
    1/4 cup ketchup

Directions

Preheat oven to 400 degrees. In a large bowl, combine all ingredients, except ketchup; blend thoroughly, using your very clean hands. Place about 1/3 cup of meatloaf mixture into each of the 12 muffin cups, pressed lightly, but not squishing, then spread a little ketchup over the top. Bake for 20 minutes or until centers are no longer pink. Serving size is 2 of these little guys.
