Ingredients

    1/4 cup sugar
    1/2 cup butter
    3/4 cup honey
    1 Tbsp. light olive oil
    1 large egg
2 1/4 cups whole wheat pastry flour ( I like to substitute 1/2 cup of regular whole wheat flour for extra texture.)
    2 Tbsp. ground flax seed
    1 tsp. cinnamon
    1/2 tsp. nutmeg
    1/2 tsp. baking soda
    1/2 tsp. salt
2 cups rolled oats ( I prefer regular not quick)

Drain raisins well and add to batter.

  • I made these cooking minus nutmeg and flax seed. I don't know how that affected the outcome but I found these cookies rather bland. They were not as moist as I like my cookies to be. I doubt that I will be making these again. - 9/27/08
