Carrot and Avocado Salad

Ingredients

    450 grams carrots, grated
    1 ripe avocado, mashed
    300 grams chicken, cooked and chopped
    1 tbsp canola oil (to cook the chicken)
    1/4 cup toasted sunflower seeds
    1/4 cup toasted pumpkin seeds
    2 tbsp balsamic vinegar and lemon juice
    2 tbsp dijon mustard
    black peppr to taste

Directions

cook chicken according to package directions in canola oilo, and mix with vinegar, mustard, lemon juice and pepper together, set aside. Mix carrots, seeds and chicken together, and then pour avocado mix over the salad, mix well. Serves 4.
