Muscle -Packing Meatloaf adapted from Devin Alexander

Ingredients

    1 cup dry oatmeal
    1/2 cup 1% milk
    1 egg
    1/2 cup minced carrots
    1/3 cup finely chopped onion
    1 tbsp dried parsley
    1 medium clove garlic chopped
    1/2 tsp salt
    1 lb extra lean ground beef
    8 oz. chopped tomato

Directions

Preheat oven to 350. Spray baking dish with olive oil spay or Pam. In medium mixing bowl combine milk and oats - let sit for 3 minutes or until oats are softened. Add egg, followed by tomato, carrots, onion, parsley,garlic and salt. Mix well. Add ground beef and mix until well combined. Transfer mixture to prepared pan.
Bake for 30 minutes or until it is no longer pink inside. Remove from oven and let sit for 10 minutes before serving
