Fool Your Family Chocolate Chip Cookies

Introduction

A yummy wheat-free cookie that is perfect for those with gluten intolerance! A yummy wheat-free cookie that is perfect for those with gluten intolerance!
Number of Servings: 48

Ingredients

    2 Tbsp olive oil
    2 Tbsp canola oil
    3/4 cup packed brown sugar
    1 egg
    2 tsp vanilla
    3/4 cup quinoa flour
    3/4 cup millet flour
    1 cup wheat-free rolled oats
    1 tsp baking soda
    dash of salt
    1/2 cup chocolate chips (make sure that they have not come into contact with any wheat products)

Directions

Cream together the oils and sugar in a large bowl. Beat in the egg and vanilla. Mixture should have the look of wet sand.

In a medium bowl, combine the flours and oats. Stir in the baking soda. Add mixture to the wet ingredients. Stir in the chocolate chips.

Roll mixture into small balls or drop by tablespoonfuls onto greased baking sheet.

Bake at 325F for 14 to 16 minutes. Let cool for a few minutes on the baking sheet as they tend to be crumbly - don't worry, they will set once cooled completely!
