1 Eggplant, peeled, halved and sliced
2 medium red peppers, sliced.
*Peppers, sweet, red, fresh, 2 medium
1 Green Pepper, sliced
1 Medium Onion, sliced
1/4 C Olive Oil
Bake 20 minutes, basteing frequently.
Place on serving dish and garnish with fresh basil leaves if desired.
