2 cups Whole Grain Udon Pasta
1 package SUNBIRD Stir-Fry Seasoning Mix
2 tbsp reduced sodium soy sauce
2 tsp sugar
1/3 cup water
1 tsp olive oil
1 lb. boneless skinless chicken breasts, cut into strips
2 cloves garlic, minced
1 pkg. (14 oz) stir-fry vegetables
1/2 cup fat-free reduced-sodium chicken broth
1 Tbsp. peanut butter
MEANWHILE, heat oil in large nonstick skillet on medium-high heat. Add chicken and garlic; stir-fry 3 min. or until chicken is no longer pink. Add vegetables and peanut butter; stir-fry an additional 3 to 4 min. or until chicken is cooked through, add seasoning mix, stir-fry until thickened.
DRAIN spaghetti; return to pan. Add chicken mixture; mix well. Spoon onto serving platter.
Makes 4 servings, about 2 cups each
