Stewed Tomato and Peppers

Number of Servings: 6

Ingredients

    .5 chopped Green Peppers
    1/4 C diced celery
    1 small onion, chopped
    1 clove mince garlic
    3 cup, chopped tomato
    1 T Red Wine Vinegar
    1/4 t black pepper

Directions

Heat large non-stick skillet over medium high heat with cooking spray.

Add green pepper, celery, onion, and garlic. Sautee for 5 minutes. Add remaining ingredients to skillet.

Bring to boil. Cover, and reduce heat and simmer for an additional 15 minutes, stirring occasionally.

Serves 6
