Thea's Spa Breakfast

Introduction

Number of Servings: 1

Ingredients

    Egg, fresh, 1 medium (Scrambled)
    Dried or Fresh herbs to taste (whatever you feel like: Dill, Cilantro,Basil)
    Salt, (to taste)
    Pepper, black, (to taste)
    Trader Joes Mixed Herb Salad Greens, 1/2 Cup
    1 Medium Potato, raw
    Chili powder, 1 tsp
    Onion powder, 1 tsp
    Garlic powder, 1 tsp
    Crumpet, 1 serving
    Extra Virgin Coconut Oil, 1 1tsp (Optional, or use Margarine)

Directions

POTATOES: Slice Potato into 1/4 inch circles. Place on a plate and microwave (for 2 minutes or until soft). Heat a cast iron skillet or no stick pan add Pam or other cooking spray. Add potatoes season with salt, chili powder, onion powder and garlic powder to taste. Brown on one side then flip (should take about 2 minutes)

EGGS: Meanwhile, Heat a cast iron skillet or egg pan. Spray with Pam or other cooking spray add salt, pepper and herbs to taste. Scramble until no longer runny, or your preference.

Toast Crumpet and extra virgin coconut oil or margarine

Place Salad greens on a plate. And Voila...A Spa Breakfast fit for a Queen or King!

I also, like to have it with Kiwi Pear Green Tea Iced or Mint Iced Tea.
