All Bran Muffins

Introduction

Modified from The Original All Bran Muffin recipe on the Kelloggs cereal box Modified from The Original All Bran Muffin recipe on the Kelloggs cereal box
Number of Servings: 6

Ingredients

    1 1/4 cup whole wheat pastry flour
    1/2 cup sugar
    1 tblsp baking powde
    1/4 tsp salt
    2 cups Kelloggs All Bran cereal
    1 1/4 cups fat free milk
    1 egg
    1/4 cup extra vigin olive oil

Directions

Stir together flour, sugar, baking powder and salt. Set aside. Combine cereal and milk in a large mixing bowl and let stand about 2 minutes or until the cereal softens. Add egg and oil and mix well. Add flour mixture and stir until combined. Place evenly into a 12 cup muffin/cupcake pan that has been coated with cooking spray (I like the kind that has some flour in it as well). Bake at 400 degrees 20 minutes or until golden brown. Makes 12 muffins.
