Introduction

I haven't tried this recipe using lower-fat butter, but everything else is healthy. It's a little high in fat but my family loves it, so I'd like to find a way to make it a little less fattening, because it's really good. Number of Servings: 6

Ingredients

    5 medium potatoes, sliced with or without skin
    1/2 cup chopped onion
    3 garlic cloves
    1/2 stick butter (unsalted)
    1/2 cup slices fresh mushrooms
    Dash of salt
    1 tsp. black pepper
    1 tbsp. garlic powder
    1 tbsp. oregano
    (any other seasonings to taste are a nice option)

Directions

1. Slice potatoes and put them aside.
2. Slice mushrooms and put aside.
3. Chop garlic cloves.
4. Melt butter in a non-stick pan on medium-high heat, with chopped onion, garlic and mushrooms.
5. When butter is melted add potatoes and saturate.
6. Add the rest of the ingredients.
7. Saute on medium heat, stirring occasionally, until potatoes are soft and beginning to brown.
